You will see lots of oatmeal on my blog and on my Instagram (@marcsisplate), because I just simply love it in the weekends. Sometimes, when I have time in the weekdays, also then. This very creamy and sweet oatmeal with a classic combination of tastes.
If you like the taste of peanut butter and jelly on your toast, then try this out with your oatmeal. Believe me it is as good as the other one, but fill you very well for the rest of the morning. I made my own jam as well, so I am going to tell the recipe of that one too.
- 4 big tbsp. oat bran
- 300 ml rice coconut milk
- 1 tsp vanilla extract
- 1 tbsp crunchy peanut butter
- red currant
- 1 tsp stevia
- Warm up the milk, add the vanilla and the oat bran. Cook it until it’s creamy and thick. Add the peanut butter too. Stir it sometimes, than it gets the perfect consistency.
- Meanwhile, in another pot, start to make the jam. Put the raspberries and the redcurrants in the pot with the stevia and cook it until it looks like a jam. Stir it also sometimes to break the fruits. When its done, blend it for a smoother finish (if you want to).
- Plate them together, decorate it with fresh raspberries and currants. You can add more peanut butter too.
