I mostly put fresh fruits over my oatmeal, lot of times it is blueberry, because I just simply love them. Then I saw some other photos, when they cooked it into the oatmeal, and it gave it a perfect purple color. Of course, it does, but it never came into my mind just like that. I tried it and it looked amazing!
You don’t need artificial colorings to give nice colors to your food. This is a perfect example. It had such a pretty shade and even the flavor was perfect! With blueberries, you cannot go wrong, or at least not with me. I also wanted to spice it up a little, and I really like the taste of the anise. Therefore, I thought it will go well with this oatmeal. It turned out pretty good, so if you want to try it for yourself, then here is the recipe:
Ingredients
- 300 ml rice-coconut milk
- 4 tbsp rolled oat
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ½ handful blueberries
- hint of ground anise
- 1-2 tbsp agave syrup
- pinch of salt
Method
- Pour the milk in a pot and turn on the heat. Add the ingredients and stir it constantly.
- You can mash the blueberries with your spoon, and then it gets more intense color.
- Plate it and decorate it with whatever you would like to. I used banana, blueberries, puffed quinoa and some sweet sprinkle. I also add a big spoon on almond butter for extra creaminess.
It turned out as a very delicious and pretty dish with this decoration. It is a sweet and fulfilling breakfast.
