Cinnamon Oatmeal with Blueberry
I think this is one of my all-time favorite oatmeal from this winter time. It is just so festive, snowy and frozen looking, that I just simply adore it. I always like to make my oatmeal bowls pretty, because it is jut better to be eaten like that. I don’t know about you, but this feeds my soul as well.
So this is not only a pretty one, it has also an extremely delicious taste. I love cinnamon, so I love to pack my bowl with it. It works perfectly with blueberry as well, it’s berry good. 😛 The base is a simple cinnamon oatmeal which warms you up and on the top some blueberry ‘jam’ whipped up in 5 minutes, banana, fresh blueberries, etc. It just looked so pretty to eat but in the end my stomach won!
- 300 ml rice-coconut milk
- 4 tbsp GF rolled oats
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- little salt
- fresh blueberry
- apple stars
- blueberry jam (homemade with a tbsp of maple syrup)
- shredded coconut
- Make the jam. Cook the blueberries with 1 tbsp maple syrup, until it looks like a jam.
- Make the oatmeal. Add everything in a pot and cook it until it’s creamy.
- Decorate and enjoy it!
Easy, quick and a delicious breakfast in a cold morning!
