Blackberry Pancakes (Gluten free)

  Well, I love pancakes for breakfast. To be honest, any time of the day. With the right combinations, it can be so amazing and delicious! You can combine it basically with anything, and that is awesome. In this recipe, I made it with some blueberry and made my own blueberry yoghurt.

HAPPY HALLOWEEN EVERYONE! This is the spookiest day of the year so I am here to celebrate it with some creepy pancakes. However, we don’t really celebrate it here in the Netherlands, as in the US, I always love to make some treats and meals.

🎂HAPPY BIRTHDAY TO ME AND HAPPY EASTER TO YOU!🎂 Hey, lovelies! Happy Easter! For me this is an important day! It’s my birthday! Yep, I just became 28 years old. It sounds a bit lot for me but I have finally found myself and ready for the big life! Having a great job and so much wonderful experiences in this year that I couldn’t wish for more! It’s the greatest year so far for me and I hope it will be better and better! 💕 . Btw, what could be better to hear before my birthday than yesterday few people by the pool made a bet how old I am. They thought I am 20. 😂 (I have way too young face.) I told them it’s very sweet but I’m actually 8 years older... 😜 . To celebrate the ‘new me’ and being on my way to my goals I am here with cute and colorful mini donut (I would say just like me but I’m not sure everyone is open to my sense of humor😂)! On Sunday I will have my birthday as well (and I’m always excited about that)! . 🥕VEGAN AND GLUTEN FREE CARROT AND BLOOD ORANGE CAKE🥕 Hey, lovelies! Happy #WellnessWednesday! How is your week going so far? How do you prepare for Easter? Have you started yet? I see that everything is full with Easter themed food so I thought I’ll share some with you as well! . This carrot and blood orange cake was so pretty looking at @foodie.yuki (go to her feed for the recipe) that I had to make it when I’ve seen it. It was super delicious! However, I turned it to gluten free to be suitable for me. I used the same amount of flour of oat-, buckwheat flour and a little of a GF flour mixture. It didn’t turn out as fluffy as from Yuki, but it was still extremely good! I had half of the cake only for myself. Within less then 24 hours.😶 . Of course, this cake it perfect for Easter as well, so if you search for a nice vegan option, this one is yours! 😍 (Mine as well! 😋😋😋) I really wish I had a slice now! . 🍓GLUTEN AND DAIRY FREE FRENCH TOAST🍓 Happy Sunday, everyone! How is your weekend? I hope you can enjoy it and relax as much as you want! I have several things to do (catch up with my blog, prepare some posts, journal) but it will be all fine at some point! 😊 . Sooo, Sunday is for relaxations and great breakfasts, right?! That’s why I’m here with this delicious French toast recipe which is completely gluten and dairy free! It was sooo delicious, that I just sat down and finished the whole plate. Sorry, Not sorry, I couldn’t help myself! So here’s the recipe if you want to make it as well: . Ingredients (5-6 toast bread) 2 big egg 100 ml nut milk (I used my own one, recipe few post behind) 1 big tsp cinnamon 1 tsp vanilla extract 2 tbsp unrefined cane sugar (optional) pinch of salt 5-6 slice GF toast bread (@schaerglutenfree) coconut oil Toppings fruits: raspberry, strawberry, blueberry maple syrup . Method 1️⃣Mix everything together, except the bread and the coconut oil. Beat it until it is completely combined and the sugar dissolved. 2️⃣Heat up a skillet pan and add the coconut oil. 3️⃣Soak one toast bread (both sides) and fry them in the pan. Be careful with the soaking! It can fall apart if you leave the bread in it too long. 4️⃣Repeat it with the other slices, make a pile and add the fruits. 5️⃣Pour maple syrup over it and enjoy! . It is super easy to make, doesn’t take forever and it is super delish!
