🥦PEA PASTA WITH ROMANESCO AND ROASTED TOMATO🥦 Happy Friday, everyone! Are you ready for the weekend? I have some nice plans and it’s a bit busy but it will be great! If you will be a busy weekend as well, you’ll need this extra quick recipe! . This pea pasta with Romanesco and roasted tomatoes is really just 30 minutes to make or even less! It has a great and rich taste with a little extra spice thanks to the chili. Super easy, super quick and super delicious! . Ingredients 3 tbsp olive oil + to roast 2 chopped garlic cloves 1 tsp chili flakes 200g pea pasta 400g Romanesco (broccoli) 200g cherry tomatoes . Method 1️⃣Preheat the oven to 200C. Put the tomatoes (in whole) on a baking sheet, pour some olive oil over it. Roast it until the skin softens and start to burst. 2️⃣Meanwhile, boil water for the pasta, and prepare the Romanesco by chopping it into smaller pieces. 3️⃣Boil the pasta until it’s ready. At the same time, add olive oil to a skillet. Add the chopped garlic cloves and chili flakes. Fry them for few minutes. 4️⃣Add the Romanesco and cook it until it softens a bit (you can also precook it in water, or steam it, I just love it a bit crunchy in my pasta😋). Season it wit salt and pepper. 5️⃣Add the cooked pasta with a little bit of cooking water, mix it well. Serve it in a bowl with the roasted tomatoes. . I hope you’ll enjoy it! I had a very special day yesterday with very special people, and we had food from them. I had it too, however it had gluten and dairy. Well, the experience was great but I had a horrible evening/night. With lots of pain. So, it made me feel even more confident, that my lifestyle and diet change was a good idea.
